Notice how the sailor throws his weight very far BACK in the boat through a tack to get the bow to 'pivot' on its transom and bear away quickly.
..... effective with little forward-speed as in this case.
He tries a bit (look at how far forward his left-hand is going into the first gybe), but might do even better, if heading for a gybe he moves his weight forward to lift the transom and allow it to 'skitter' across the water.
